Method
Preheat the oven to 180c
Place all the dry ingredients onto a lined baking tray and drizzle the coconut oil and Balsamic vinegar over the top and sprinkle with cinnamon
Bake for 20 minutes, watching carefully as to not let it burn. You'll know it's done when the granola is golden brown and very fragrant. Once cooled sprinkle the dukkah over the top.

What is ‘first pressed’?
 The oil that comes from the first "pressing" of the olive, is extracted without using heat (a cold press) or chemicals, and has no "off" flavours is awarded "extra virgin" status. The less the olive oil is handled, the closer to its natural state, the better the oil. If the olive oil meets all the criteria, it can be designated as "extra virgin".
What is 'cold pressed' olive oil?
The phrase "cold-pressed" is a term originating from the traditional olive presses. This term came about many years ago when olives were "pressed" to extract the oil on traditional machines at room temperature, without the use of additional heat.

Dukkah is the combination of spices and nuts that are pounded after roasting into a form that is neither a powder nor paste.
