Sweet Spice Coconut Granola

Sweet Spice Coconut Granola

Ingredients

  • 1/2 cups gluten-free rolled oats
  • 1/2cup unsweetened coconut flake (large flakes are best)
  • 1/2cup slivered raw almonds (or raw almonds, chopped)
  • 1Tbsp coconut sugar
  • 3Tbsp coconut oil
  • 1/3cup Caramelised Coconut Balsamic Vinegar
  • 1 Tbsp Sweet & Spice Dukkah
  • 1tsp cinnamon powder

Method

Preheat the oven to 180c

Place all the dry ingredients onto a lined baking tray and drizzle the coconut oil and Balsamic vinegar over the top and sprinkle with cinnamon

Bake for 20 minutes, watching carefully as to not let it burn. You'll know it's done when the granola is golden brown and very fragrant. Once cooled sprinkle the dukkah over the top.

What is 'extra virgin' olive oil?

 In order to be 'extra virgin' olive oil, the oil needs an acidity level less than 0.8%, among other attributes. The acidity of Flaschengeist oil s is typically around 0.12%. It is also considered the best; least processed ‘comprising’ (extract so to speak) the oil from the first pressing of the olives

What is ‘first pressed’?

 The oil that comes from the first "pressing" of the olive, is extracted without using heat (a cold press) or chemicals, and has no "off" flavours is awarded "extra virgin" status. The less the olive oil is handled, the closer to its natural state, the better the oil. If the olive oil meets all the criteria, it can be designated as "extra virgin".

What is 'cold pressed' olive oil?

The phrase "cold-pressed" is a term originating from the traditional olive presses. This term came about many years ago when olives were "pressed" to extract the oil on traditional machines at room temperature, without the use of additional heat.

What is Dukkah and its uses?

Dukkah has many uses; serve with good quality crusty bread and our Extra Virgin Olive oils, as a coating for fish or chicken or sprinkle through a salad for texture and crunch. Dukkah is the combination of spices and nuts that are pounded after roasting into a form that is neither a powder nor paste.

Our Dukkah is common in Middle Eastern recipe and typically includes hazelnuts, chickpeas, coriander, cumin and sesame seeds. Each batch is made uniquely for Flaschengeist and may vary from time to time depending on seasonal and market demands.
